Here are a few of our previous Night School class outlines.

Ewe Are the Best
Sheep were likely the earliest domesticated dairy animals, and they
still dominate the cheese scene in many regions of the world.
Learn why sheep milk is uniquely suited for cheese making, as
you sample fresh, washed, aged, bloomy, and blue varieties.

Spring has Sprung: The Cheese is Here!
Goats, sheep and cows beat a path from the barn when
sunshine and green grass return to the fields.
Spring brings new babies, and plenty of milk for
turning into cheese. Come enjoy the season's
dairy best from close to home and far away.

Farmer's Market Cheese
With summer just around the corner, eating locally suddenly
seems a lot easier–and tastier too. Come sample some of the
delicious farmstead cheeses we have in store from Ontario and
Quebec, and gather ideas for how to enjoy them with
the freshest seasonal produce.

Charcuterie at the Fromagerie
Our ancestors' ancient techniques of preserving meat and milk produced
foods so delicious and compelling that we continue to enjoy them
today. Fermenting, salting, drying and smoking create the
inimitable taste and texture of millennia-old treats like
Westphalian ham, Prosciutto di Parma, and Parmigiano Reggiano.
Come sample a range of these venerable flavours while learning
about their history and production.

Cheeses of Spain and Portugal

Party Season Cheese
This month is packed with opportunities to indulge in cheese. Come sample the season's best and gather inspiration for what to serve at the office party or open house; for how to add cheese to your festive meals; and for how to please with gifts for the fromagistes on your list.

Fireside Cheese
When the weather outside is frightful, there's no better pursuit than to hunker down and stay warm than with a plate of robust, full-flavoured cheeses and a nip of something fortified. Join us for a presentation of hearty winter cheeses that make chilly evenings something to look forward to.

Vive La France
France is a land of hundreds of cheeses: soft ripe discs from the lush pastures of Normandy, rugged sheep-milk tommes from the hilly south, tiny goat forms from the mineral-rich banks of the Loire, and massive golden wheels from the Alps. Come learn about the history, regions and styles of French cheese while sampling a selection of our favourites.

Wine and Cheese Primer
For most people, wine remains cheese's preferred partner, despite the many noisy critics who claim this classic combination to be a major mismatch. One thing is certain: some wine and cheese pairs work way better than others. Come learn how to pick more hits than misses as you sample a range of wines and cheeses.

Canadian Cheese Past and Present
Travel coast-to-coast and back in time at this session exploring the roots and development of Canada's cheese culture. From its origins on farms and cooperatives of the early colony, to last century's industrialization and enrichment through immigration, on to the past twenty years' resurgence of craft-scale production, Canadian cheese tells a fascinating and tasty tale.

Local Cheese Harvest
Like apples, pears, and squash, cheese is a seasonal food. A long summer of grazing makes for happy animals, full flavoured milk, and the best cheeses of the year. Come enjoy the fruits of the harvest, selected from Ontario and Quebec, and pick up your Thanksgiving Cheeses.

La Dolce Vita
Indulge in a late-summer evening of Mediterranean flavours as you you enjoy classic cheeses from Europe's warm, sunny south. The formaggi of Italy and quesos of Spain are among the worlds oldest and finest examples: always delicious and never out of style.

Cheese for the Winter Pantry
Look forward to hunkering down for the cold season as you sample robust, full flavoured cheese that work as accompaniments and ingredients for stews, gratins, and other rib sticking winter fare. Get ready to hibernate!
